Here you can find our Greek Easter Famous Soup MAGEIRITSA served when Jesus resurrection announced on Sunday early Morning after a magical devoutness οφ pious congregation of believers.
Clean thoroughly the lamb’s organs (500gr), guts, liver, lung, etc
Chop them in very thin pieces like 1,5-2cm
Put them into a pot with hot water and boil for 20-25 minutes only
Try to remove the foam whilst the Organs boil with a large spoon, like shaving
Keep and save the water!!! and keep the chopped boiled hot organs aside.
Add chopped onions (5 small pieces), Mushrooms Portobello large cuts, salt and pepper, olive oil and the boiled organs and saute them always mingle in order to get a nice colour. STOP IT
Add NOW into the casserole add Zeus Juice and white wine 1-2 classes, the water of the boiled organs you’ve saved before and add some water if needed… play it with your ears
Afterwards, add more water, sea salt & cracked pepper, put NOW the vegetables and the herbs
- 15 leaves of Lettuce cut them with your hands in 4 pieces each leaf (!!)
- Fresh onions (chopped)
- Fresh organic Anise (3 spoons)
- Fresh Organic parsley
- Fresh Mint leaves
- 150gr of RICE CAROLINA STYLE
- Just an idea of fresh oregano
- 4-5 small onions chopped
- 1 Knorr cube of Chicken base (Be careful!!! Always balance how salty is your food in casserole… Better to add salt after the chicken base if needed)
- 1 spoon of highest Danish or French QUALITY butter (Just kidding Canadian’s good)
Let them boil slowly for an hour…adding water or white wine if needed
Final Phase before you serve the Magiritsa
Lower the heat
The food must reduce significant boiling
Break 3 eggs and separate the egg’s white and the yolk
Mix the white part of the eggs in a bowl with a fork in order to get a thick and denser mixture.
Add the yolk and lemon juice from 1-2 lemons (not too much) and mix them with a fork, same speed same rotation.
Empty few spoons (Be careful one spoon at a time) of hot water from the casserole’s “soup” and add them to your bowl whilst you don’t stop mixing the eggs with the fork. (It’s a kind of Magic, ask for help here)… When your mixture is hot enough… keep mixing with the fork and Empty it into the casserole…
Now increase again the heat (1/2 let’s say) and mix it slowly, add ideas of fresh well-chopped mint, parsley, & anise and let it boil for 2-3 minutes and 2 spoons of BUTTER.
